I diced up half an onion and sauteed it in a saucepan with a little butter. I chopped up the chicken tenders and took the wing meat off the bones. I added that to the pan with the onions and a can of cream of chicken soup. I had half a bag of frozen peas in the freezer, so I tossed those in too. I boiled some pasta, I happened to have angel hair, but any pasta would be fine. I seasoned the concoction in the saucepan with a little onion powder and pepper. Since the chicken tenders were from a restaurant and the cream of chicken soup is so salty, I didn't add any salt. But, you could if you thought it needed it.
What an easy and quick dish to throw together for dinner. I love quick an easy meals and enjoy the fact that I didn't have to do a lot of work to make it. You could use can chicken or buy a rotisserie chicken or even cook some chicken to make this dish. But, if you are like me and you have leftover chicken on hand, this is the way to go.
Cooked chicken (about 2 cups)
Cooked Pasta (half a box of angel hair)
Frozen Peas (half a bag)
1 Cup chopped onion (Sauteed)
1/2 Tablespoon butter
1 Can Cream of Chicken Soup
1/2 teaspoon onion powder
1/2 teaspoon black pepper
3/4 cup shredded cheese
Melt butter in a saucepan. Chop onion and add to melted butter in the saucepan. Cook until transparent and tender. Add chopped chicken. Mix thoroughly. Add frozen peas and Cream of chicken soup. Season with onion powder and pepper. Mix well and set aside. Boil water and cook pasta according to directions on the box. Drain. Mix the chicken mixture with the pasta. Place in a casserole dish and top with shredded cheese. Bake at 350 degrees about 25 minutes or until the cheese is melted. Serves 4
